Customer Review
Before buying the smoker, I did extensive research and was impressed by its features. I ordered high-quality gasket material and lavalock high temp rtv and applied it to every screw and place where the firebox meets the food chamber. I also attached felt gasket material to the firebox door. After letting it sit for 24 hours, I seasoned the smoker by wiping the interior surfaces, including the grate, with Canola oil and heated it at 180 for five hours followed by 3 hours at 250. The results were incredible – no issues whatsoever. Read review in details here.

Buying guide: Best offset smoker under 1000
No two offset smokers are created equal, so it’s important to consider a few key features before purchasing. Here are some factors to keep in mind:
-Build quality and insulation
When it comes to buying an offset smoker, the quality of the construction should be your top consideration. But beware: a low-quality model made from thin metal will give you little control over the heat, oxygen, and smoke in the cooking chamber and where the smoke is distributed. This is why opting for a minimum of ¼-inch thick steel, along with well-made vents and food chamber doors, is important. Of course, quality doesn’t come cheap, but the investment will be worth it.
Now, it’s a common misconception that affordable smokers are flimsily built. Several good options are available if you do your research properly. But keep in mind that build greatly impacts impact on heat retention, and low-quality builds are often more affected by rust.
So when you’re choosing your offset smoker, remember the golden rule: quality construction is key. Make sure you go for at least ¼ inch thick metal, and rest assured that you’ll be well on your way to deliciously smoked meats and veggies.
-Are reverse flow smokers better?
Flow offset smokers come in two varieties – regular and reverse. With a regular setup, heat and smoke are drawn from the firebox over the meat once before exiting through a chimney opposite the firebox. On the other hand, reverse flow offset smokers use a baffle system that draws the smoke under the cooking chamber before it is pulled back over the meat on its way out of a chimney mounted on the same side as the firebox.
This unique system uses heat and smoke twice, imbuing your meat with richer flavors and a more tender texture. If you’re looking to invest in a smoker but aren’t sure which one is best, remember this simple tip – with a regular smoker, the chimney will be located on the opposite end of the firebox, but with a reverse flow offset smoker, the chimney will be located on the same end.
-The Price
To avoid getting stuck with a “useless” offset smoker, don’t be lured in by a low price. Instead, aim to spend about $800-1000 for a well-built entry-level model. It may seem like a hefty sum, but investing in better build quality now will save you from endless frustration later.
Think of it this way: by spending a little more upfront, you’ll significantly reduce your stress and enjoy perfectly smoked meats in no time. On the other hand, if you come across a $200 offset smoker deal at Home Depot, it’s best to steer clear. Remember, if it seems too good to be true, it likely is.
Start by estimating your budget and deciding how much you’re willing to spend on an offset smoker. Will you opt for a high-end, $1000 smoker or something less expensive? Once you have a clear budget, you’ll make your decision easily.
-The size of the smoker:
When purchasing an offset smoker, it’s crucial to measure the available space in your backyard before embarking on your shopping venture. Remember that the main chamber on an “offset” smoker protrudes from the side or back with a firebox and potential grill gate.
Once you’ve established the spatial parameters, it’s time to consider the smoker’s size. If you’ll be cooking for a large group, opt for a larger model and ensure adequate space to accommodate your food.
Of course, size isn’t everything. When selecting the best offset smoker under 1000, consider the two available varieties: horizontal and vertical smokers. We recommend choosing the perfect size to accommodate your backyard and leave room for ventilation.
-Type of Fuel:
Offset smokers require fuel to create heat and smoke to cook their food. When selecting an offset smoker, you must decide between charcoal or wood-fired smokers.
Charcoal models are great for beginners because they’re relatively easy to use and maintain. Plus, they don’t take up much space in the backyard and offer a slightly smokier
-Wheels
As previously mentioned, offset smokers can weigh upwards of several hundred pounds. Thus, if you plan on transporting your smoker to events or navigating it around your property, it’s imperative to consider investing in a model that offers wheeling capabilities. Doing so ensures increased maneuverability and mitigates the physical strain associated with lugging such a heavy appliance around.
-Capacity
When selecting the best offset smoker under 1000, capacity is a critical factor to consider.
After all, what good is a smoker that needs more space? While there is no definitive range for capacity, knowing your needs is key.
For example, if you’re cooking for a smaller family, a smaller offset smoker may suit you perfectly.
However, if you’re hosting large family dinners or events, you’d better select a larger option.
Remember: a smoker with ample capacity is an investment in perfecting the art of smoking.
-Temperature range
Smoking meat is an art form that involves carefully regulating temperatures to achieve optimal results.
The key is finding that sweet spot between low enough to cook the meat to tenderness and high enough to power through the stall.
It’s important to consider how you plan to use your offset smoker- for grilling, searing, smoking, or a combination of the three – and select a smoker that can handle a temperature range of 200 to 400 degrees Fahrenheit to maximize your culinary creations.
-Mobility
Mobility is a crucial factor when purchasing a smoker, especially if you’re buying a larger model. Consider models that come equipped with sturdy wheels, allowing for easy movement. It will make it easier to shift the smoker around and ensure the wheels can bear the smoker’s weight.
-The presence of a thermometer
It’s common to find a thermometer affixed to the lid of offset smokers to monitor and regulate temperature. The market offers an array of thermometers that yield varied readings, but a digital option is often the most reliable for accurate temperature adjustments. Remember these factors when searching for the right thermometer to suit your needs before purchasing.
Who should buy an offset smoker?
Offset smokers represent the quintessential smoking experience for pitmasters who dream of providing succulent smoked meats to an entire neighborHoweverowever, owning such a behemoth poses dra despite their popularity and swagger back. A smoker should match your culinary aspirations and requires thoughtful decision-making.
To help you decide if this culinary exclamation point is for you, we’ve outlined the main pros and cons of getting an offset smoker.
Pros of Offset Smokers:
- Offset smokers are ideal for cooking large amounts of food thanks to their spacious central cooking chamber.
- The firebox is separate from the cooking chamber, allowing you to add more fuel without losing heat or smoke.
- While they are often called “stick burners,” offset smokers work best when fueled with wood and charcoal. This method produces a smoky flavor without the risk of excess ash, soot, or creosote ruining the meat, and it’s far less complicated than cooking with all wood.
- Some models feature a grill grate over the firebox, offering the versatility of direct grilling and smoking in a single unit.
Cons of Offset Smokers:
- Offset smokers are typically heavy and not very portablitaking them difficult to independently your own.
- Due to their size, they may be better for those with limited outdoor space for storage and use.
- Cooking on an offset smoker is not a quick process, as they can take up to an hour to preheat and are best suited for low and slow smoking techniques.
- Climate conditions can affect the performance of an offset smoker, and very cold weather, high winds, and heavy rain may impact its ability to function properly unless you invest in a high-end, well-built model.
- Achieving the best results with an offset smoker requires practice, patience, and skill. While they can produce excellent smoke when used correctly, mastering the art of offset smoking takes effort and dedication.
To summarize, an offset smoker is an ideal choice for a dedicated pitmaster who has ample space for a heavy and large piece of equipment. This smoker is not novice-friendly, but with patience and practice, one can master the art of smoking meat and producing delicious resin. Offset smoker is worth the investment ults, so if you want to take your smoking game to the investment.
Beware of cheap offset smokers.
Buying an offset smoker is easier said than done. There are just so many shoddy, poorly designed models out there that choosing one can feel like a shot in the dark. But choosing poorly can have major consequences. A subpar smoker means bad heat retention, poorly sealed fireboxes constantly leaking oxygen, and food chamber doors that can leave your food catastrophically dried out. It’s here that Meathead Goldwyn’s words ring true: “Heat and smoke want to go up, not sideways.” If your smoker isn’t designed to keep your meat cooking evenly, you’re in for an unbalanced meal. But fear not: A well-built offset smoker ensures that heat and smoke are evenly distributed. So, whether you’re smoking brisket, ribs, or something else, a well-built smoker always ensures consistent results.
Using an offset smoker
After selecting the perfect offset smoker, it’s time to get cooking.
1-Cook with a charcoal/wood combo.
Although they are commonly called “stick burners,” offset smokers are not limited to using wood alone. With a combination of charcoal and wood, you can infuse your meats with the savory, smoky flavors of the wood while maintaining the convenient temperature control of charcoal.
To get started, fill the firebox with fully lit coals from a chimney starter and gradually add wood to maintain an even temperature. For a practical demonstration, check out the accompanying video below.
2-Use a digital thermometer.
To ensure even cooking and avoid firebox problems, monitoring temperature differences within offset cookers, which can vary by up to 75°F from end to end, is crucial.
A digital thermometer inserted into holes drilled at both ends of the cooking chamber provides the most accurate stats.
So remember to check the temperature at both ends of your smoker every 20 minutes for perfect meat every time!
3-Go easy on the smoke.
For those using wood and charcoal to smoke, generating the right amount of smoke inside the cooking chamber is crucial.
Adopt a ‘less is more’ approach and add just 4 ounces of unsoaked wood chunks at 10-minute intervals once the temperature hits 200°F.
To take your barbecue game to the next level, Aaron Franklin’s Masterclass series offers valuable lessons on fire management and wood selection, perfect for that cooking on an offset smoker.
